Frédéric Claude is the hotel director of Château de Candie, a refined four-star castle located in Chambéry at the top of Saint Ombre’s Hill, South-East France. 

Only ten minutes from Chambéry airport and an hour from Geneva airport, there are 28 bedrooms styled to accommodate large families, couples and even your pet!  You can choose from a range of elegant family rooms and suites and luxurious bedrooms, all with ensuite bathrooms.

Each bedroom is individually decorated, some have four poster beds, some have elegant freestanding baths overlooking the forest.  Look out of the amazing spa coming in spring 2018!

If you like food, this is the beautiful Château is the place to head stay.  L’Orangerie Restaurant is truly gastronomic using only the finest local produce served with dynamic French wine.

I haven’t even started on the French bread and their amazing cheese trolley, but as you can imagine, it lives up to its reputation!

Where are you from?

I was born in Perpignan French Cataluña.

What was your previous career before working at Château de Candie?

I have a bachelor of hospitality. My first job experience was at Le Manoir aux Quat Saisons with Raymond Blanc. I began as a receptionist at that time the head sommelier was looking for a new sommelier and I proposed myself and here I am! I worked three years at the Waterside Inn at Bray and I discovered for the first time of my life Mister Diego Masciaga General Manager of the Waterside who became my mentor. I joined Chateau de Candie in November 2016.

Yes, Michel is that type of iconic person you will meet once in your life time.

Tell me about your wine company

The company name is www.dynamicvines.com we specialize in importing wine from south of France organic and biodynamic.

How many bottles of wine is made from the Chateau de Candie vineyard?

Château de Candie is making up to 8000 bottles a year.

What is your favorite food and wine combination?

Sweatbread with a Chateauneuf du Pape Blanc Chateau de Beaucastel Roussanne Vieilles vignes limit to perfection.

Where is your favorite restaurant in the UK?

The Waterside Inn of course!  It’s a unique highway of the best food and service in UK.  I also like The SQUARE with the Chef Philip Howard in Berkeley square, Mayfair, he is a pure genius but has since left to pastures new.
